Games that use dice and the dice themselves goes back to the Crusades, but modern craps is only about one hundred years old. Current craps evolved from the old English game referred to as Hazard. Nobody absolutely knows the ancestry of the game, however Hazard is said to have been discovered by the Englishman, Sir William of Tyre, around the twelfth century. It is presumed that Sir William's horsemen played Hazard through a siege on the fortification Hazarth in 1125 AD. The name Hazard was acquired from the citadel's name.

Early French settlers brought the game Hazard to Canada. In the 1700s, when banished by the British, the French headed south and settled in southern Louisiana where they a while later became known as Cajuns. When they departed Acadia, they took their favorite game, Hazard, with them. The Cajuns broke down the game and made it mathematically fair. It is said that the Cajuns adjusted the title to craps, which is derived from the term for the losing toss of two in the game of Hazard, referred to as "crabs."

From Louisiana, the game extended to the Mississippi barges and across the country. A great many consider the dice maker John H. Winn as the founder of current craps. In the early 1900s, Winn assembled the modern craps layout. He added the Don't Pass line so players can bet on the dice to not win. Later, he designed the spots for Place wagers and put in place the Big 6, Big 8, and Hardways.
