Games that use dice and the dice themselves goes back to the Crusades, but modern craps is approximately a century old. Modern craps come about from the old English game referred to as Hazard. No one knows for sure the origin of the game, but Hazard is said to have been made up by the Englishman, Sir William of Tyre, in the twelfth century. It's presumed that Sir William's knights bet on Hazard during a blockade on the fortification Hazarth in 1125 AD. The name Hazard was acquired from the fortress's name.

Early French colonizers brought the game Hazard to Canada. In the 18th century, when banished by the British, the French relocated down south and discovered refuge in the south of Louisiana where they a while later became Cajuns. When they were driven out of Acadia, they brought their best-loved game, Hazard, along. The Cajuns streamlined the game and made it fair mathematically. It is believed that the Cajuns adjusted the name to craps, which is acquired from the term for the bad luck throw of snake-eyes in the game of Hazard, recognized as "crabs."

From Louisiana, the game migrated to the Mississippi river boats and throughout the country. Many consider the dice builder John H. Winn as the founder of modern craps. In 1907, Winn developed the modern craps layout. He added the Do not Pass line so gamblers can bet on the dice to not win. Afterwords, he established the spaces for Place bets and put in place the Big 6, Big 8, and Hardways.
